Turkey Burgers & Zucchini Fries


 As I mentioned in my previous post, we are trying to eat a bit healthier so I can feel well during my pregnancy.  A lot of people have asked me for the recipes for these burgers & fries we made yesterday, so here you go!

Garlic Turkey Burgers
3 lbs. ground turkey
2 eggs
garlic powder (to taste)
black pepper (to taste)
1/2 green bell pepper (chopped)
1/2 cup shredded spinach

Mix your ground turkey, eggs, green pepper and spinach together (I just use my hands - it gets blended better that way).  Then add as much black pepper & garlic powder as you like.  Be generous...ground turkey doesn't have much natural flavor, so it needs the extra seasoning!  Form into 1/2-3/4 in patties.  Makes about 8 burgers.

Zucchini Fries
2 zucchini
olive oil
1 pouch Shake n Bake (original)

Slice zucchini to desired thickness.  Put fries in a large Ziploc bag & pour in a little olive oil...just enough to coat them, don't drown them!  Zip bag and shake until all fries are coated.  Then slowly add in Shake n Bake and shake bag to coat fries (save a little SnB back).  Place on baking sheet and sprinkle remaining Shake n Bake over fries.  Bake at 425 degrees for 20-30 min.

We have made zucchini fries many times before, but this was the first time we made these turkey burgers and they were AMAZING!  I was SO HAPPY we had some left over!  You can really add in any veggies you like.  Let me know what you think if you try them!  Enjoy!
