Turkey Burgers & Zucchini Fries


 As I mentioned in my previous post, we are trying to eat a bit healthier so I can feel well during my pregnancy.  A lot of people have asked me for the recipes for these burgers & fries we made yesterday, so here you go!

Garlic Turkey Burgers
3 lbs. ground turkey
2 eggs
garlic powder (to taste)
black pepper (to taste)
1/2 green bell pepper (chopped)
1/2 cup shredded spinach

Mix your ground turkey, eggs, green pepper and spinach together (I just use my hands - it gets blended better that way).  Then add as much black pepper & garlic powder as you like.  Be generous...ground turkey doesn't have much natural flavor, so it needs the extra seasoning!  Form into 1/2-3/4 in patties.  Makes about 8 burgers.

Zucchini Fries
2 zucchini
olive oil
1 pouch Shake n Bake (original)

Slice zucchini to desired thickness.  Put fries in a large Ziploc bag & pour in a little olive oil...just enough to coat them, don't drown them!  Zip bag and shake until all fries are coated.  Then slowly add in Shake n Bake and shake bag to coat fries (save a little SnB back).  Place on baking sheet and sprinkle remaining Shake n Bake over fries.  Bake at 425 degrees for 20-30 min.

We have made zucchini fries many times before, but this was the first time we made these turkey burgers and they were AMAZING!  I was SO HAPPY we had some left over!  You can really add in any veggies you like.  Let me know what you think if you try them!  Enjoy!

This little boy has been begging me to get out the swimming pool since the beginning of March.  I promised him the first day it was warm enough, we would!  He spent 3 hours splashing around in there, came inside, demolished his lunch and took a 3.5 hour nap!  YEAH!

19 Weeks


 This pregnancy is just flying by!  Baby is 19 weeks already!  We find out if it's a little boy or girl (I think boy, Mike thinks girl) in just one more week!


 Now that the first trimester nausea has passed, I feel great!  I do have to be pretty careful what I eat.  I have learned the hard way a few times that I can't eat anything too rich, fatty or greasy or I will get EXTREMELY sick.  No pizza, ice cream or fast food.  Which, of course, is a good thing, haha!  Better for both me and baby...even though I DO wish I could have a little ice cream every now and then...  I feel the baby moving pretty much all day long, which is fun.  I am carrying much higher than I did with either of the boys. 

Can't wait to share with you if we are having our third son or our first daughter next week!  I have had dreams of both genders, so that's no help, LOL.  Have a wonderful rest of day!

Happy Shoppers


Took this while we were shopping a couple weeks ago and I just love it!  These two boys bring us such joy!  We are so thankful the "sickies" seem to have left our house, finally!  And it's a beautiful spring day...time to go out and play!  Happy Monday, all!

Still Here...

Yes, we are still here.  It has been a LONG week taking care of two very sick little boys.  :-(  Just as Luke was starting to feel better, Joshua caught the stomach bug and was up sick all night Wednesday night.  We thought he was finally doing better today, but he got sick again this afternoon.  This just seems unending!  I have been cleaning and disinfecting everything, praying that Mike & I don't get sick.  So, be patient with me, friends.  I'm here, just working on getting my little guys healthy again.

Monday

Little man seems to be feeling MUCH better today...PTL!  He hasn't gotten sick since about 3:15 yesterday afternoon, had a great night's sleep, and has keep all his food down this morning.  Hopefully we have seen the worst of it and no one else will get sick.  I am running around disinfecting everything just in case.

It's too chilly/wet to go outside today, and Momma is pooped from taking care of a sick babe yesterday, so we are just having a relaxed, stay-in-our-jammies-all-day kind of day.  Joshua is in heaven because the Disney Channel has been playing all three Toy Story movies a lot lately...he is currently watching Toy Story 3 for the umpteenth time, LOL.


I know I am biased, but are these kids too stinkin' cute or what?!

Ugh

Our sweet little guy came down with a stomach bug this morning...say a little prayer for us!  He threw up all over the pew and our friend Nick this morning right before church started.  :-(  Nick came back to our house with me so I could get him some fresh clothes and something to clean the pew with; thankfully, we only live a block away from the church!  I know this is probably one of those things I will look back on and laugh at one day, but...today is NOT that day LOL.  Little man has gotten sick a couple more times since we got home.  Praying he can keep down the bread and water he's currently eating.  Please, Lord, let this pass quickly!

 It is finally warm enough (sort of, haha) for us to play outside!  Woohoo!  We spent about an hour in the yard today and the boys had a blast.  They are both snoozing soundly now...love it when the fresh air wears them out!  Have a happy day!
